oh the joys of updates...
so we have been very busy, and i have a ton of fun pictures... but right now i have a demanding little man sitting in his high chair next to me, a pot full of chicken and dumplings on the stove, and 4 lovely pumpkins freshly picked from the pumpkin patch waiting to have their heads sliced open for carving when B, his mom, and ollie get back from the store... so instead of allllll my updates I will give you this...
The easiest and yummiest chicken and dumplings ever....
2-4 whole boneless skinless chicken breasts
2-13 oz cans of chicken broth
in a big pot, toss in the chicken broth and breasts. Bring to a boil and cook until the chicken is firm and fully cooked. Remove the chicken breast and cube and toss back into the pot. add about a cup a water and a bag of mixed frozen veggies. I like the steamfresh mixed veggies the best. bring back to a boil... add fresh pepper and salt to taste, you can also add garlic....
in a bowl mix:
2 cups bisquick baking mix
2/3 cup milk
mix together with a fork until just blended, reduce your chicken and broth to simmer and drop dumpling mix in by the tablespoon. Cover tightly and simmer for 15 minutes, or a little longer until the dumplings feel like they are done (kinda bouncy), 15 minutes about does it....
If you are related to me, you already now this recipe.... and if you are not, this is a great dinner, super easy and hearty..... my family loves it...
I also had to include the picture of max's little feet, these are my favorite socks ever, we got a almost 15 pair when ollie was born I am about down to 5-6 with max. the sock monster ate them.... anyway he is growing out of them, so sad... that is okay though they will get packed away for the next little bugger....
